It is recommended to use air dried corn rather than gas dried. The reason for this is when corn is gas dried the corn can get stripped of its elements that are needed for good fermentation. You may want to take your cracked con one step further and have it ground to make a corn meal. This is fine as long as the corn is a coarse grind.

I've used an old sausage grinder more than once to grind corn. I used the blades for the finest grind but your arms are gonna get real tired, real quick. Lot easier to buy cracked corn. I'll bet some of the folks at the Mexican market would know where to get the corn ground. Especially if they make their own tortillas. Might do it for shares.

You sure can. You won't get as good of a yield compared to properly milled corn. And you'll need to ferment it a little longer. I've done it a couple of times. I normally get about a ten percent yield. If you open the bag and all the white bits are going fluffy and stuck together. Don't use it.

If you are just trying to crack it you can get a grinder such as this or even an old hand crank that you use for meat etc, find a 5 gal plastic water jug cut the bottom off and tape it to it liek a big funnel. All you nee dto do is power the crank somehow OR just turn it. If you are just crackign it down for feed it will go quick.

I just buy whole organic corn from Azure Standard. It's human food grade and cheaper than the Scratch n Peck feed grade corn. We currently don't have any chicks. I got rid of our grinder. We do have a flour mill, which only makes fine flour but won't coarsely crack. We use this for corn bread and tortillas, since the corn is food grade.

The price of cracked corn has gone up so much recently that it took my breath away! But, I could get whole corn from a local grain supplier for 1/2 the money.
